Ingredients

  • 1.5 pounds (680g) chicken breast
  • 1 tablespoon olive oil plus 2 more for dressing
  • 1 teaspoon dried oregano
  • 6 cups chopped romaine
  • 1 cucumber, 1 cup cherry tomatoes, 1/2 red onion
  • 1/2 cup crumbled feta and 1/4 cup kalamata olives
  • Juice of 1 lemon and 1 minced garlic clove

Instructions

    Season the chicken with oregano, salt, and pepper and sear in 1 tablespoon of oil over medium-high heat, 6 minutes per side.
